Savor this moment. You step onto a terrace and look out at the expanse of vineyards, noting the shades of green that paint the hillsides and Alps in the distance. Flavors linger in your mouth, from sparkling wine harvested from the nearby vineyards, rich chocolate made locally, truffles sniffed out by dogs as you cheered them on, fresh herbs and artisan coffee. Despite the endless array of food, immersive experiences and incredible company, this trip has been a lesson in slowing down. For as much as the Piedmont way is to preserve the local ecosystem, flavor and tradition, it also keeps the memories alive.
With you on this seven-day Italian adventure is Giorgio Rapicavoli, a Miami chef raised in the Piedmont region. Consider this your inside look at the flavors and philosophies that have shaped Giorgio’s cooking. He lives by the saying “good, clean and fair,” Slow Food wisdom that has its origins here in Bra, Piedmont, and he can’t wait to show it to us himself, again! This is Giorgio’s second adventure in Piedmont with us; his sold-out experience last year was simply incredible. We can’t wait, once again, to dive deep into the culture and cuisine of Piedmont with Giorgio.
If you love fine wines and exquisite regional cuisine, this trip is for you. If you consider yourself a foodie or are fascinated by how landscape and history shape a bottle of local Barolo or Barbaresco, you’ll relish every minute. Meet winemakers and artisans whose generations-old techniques reflect the region’s authentic heritage. This is northern Italy like you’ve never experienced, a total immersive Slow Food experience.

3 Reasons to Travel with Giorgio Rapicavoli
The young and talented Giorgio Rapicavoli has won Chopped, is a two-time James Beard Award semifinalist, made Forbes’ “30 Under 30 List” and has been labeled 'Miami’s Hottest Chef.' Spending half his life in Italy’s Piedmont region, he’s long dreamed of showing his second home to the world. Our adventure last year in Piedmont with Giorgio was a huge, delicious and joyful success. We can’t wait to experience Piedmont through his eyes once again.
Family Matters
Giorgio’s Italian mom taught him how to make Sunday sauce—that authentic, meaty gravy that begs for spaghetti and meatballs. Meanwhile, his dad is from Argentina, home of seared steaks and rich wines... all the components of a perfect meal.
All By Himself
At just 26, Giorgio won Chopped and impressed a judge so much that he was invited to New York to be chef de cuisine at their restaurant. Instead, Giorgio put his $10,000 prize money to work in Miami and started his own.
Good Pasta, Good People
This is the mantra of Giorgio's newest restaurant Luca, an Osteria named after his son that not only pushes the boundaries of typical pasta, but honors the centuries of tradition that make these dishes so special.
