You’re sitting on the prow of a flat-bottomed rabelo boat, the traditional craft that’s ferried people and goods along the fabled Douro river valley for centuries. As you float past terraced vineyards and ancient olive groves, you reflect on your recent adventures: a soulful, intimate Fado performance at one of Lisbon’s oldest casas de fado; baking fragrant, cinnamon-scented tarts according to an 1837 recipe; sampling rich, biodynamic red wines straight from the vineyard. In the days to come, you’ll dine al fresco at a 17th-century manor house and wander the fish markets and back alleys of colorful, bustling Porto. But for now, you’re in no rush to arrive at your next port of call. You sit back and let the strains of traditional music waft by on a spring breeze. This is Portugal, and its magic can’t be rushed.
Joining us is Kyle Knall — the chef, owner and creative force behind Milwaukee’s Birch, where no menu will ever be the same (really, never). That’s because Kyle loves pushing himself to riff off the fresh produce at hand. Even one ingredient swap can spur a whole new plate for the evening. It’s a talent that has the James Beard Foundation’s attention, leading him to become a recent semifinalist for Outstanding Chef. Join Kyle to eat deliciously fresh seafood, devour meats charred to perfection over wood-fired grills, and cheers the winemakers of the Douro Valley, the chefs and producers of Porto, and all the other talented artisans who we’ll meet on this incredible journey to Portugal.
If you want to venture into iconic Portugal, and do it with exclusive access, this is the trip for you. Meet acclaimed local winemakers and artists. Eat the best street foods, and at top regional kitchens. Catch a sunset while sipping a world-class wine. Mouthwatering flavors and soaring scenery—this is our Portugal.

Why We Love Kyle Knall
Kyle is down-to-earth, but don’t let his laid-back personality fool you. His passion and confidence comes out on every plate. From working at New York City’s Gramercy Tavern to opening restaurants in London and New Orleans, his keen eye for detail has made his third restaurant concept, Birch, an instant darling in his Milwaukee community.
Wine & Family
When you ask Kyle what his passions are (not counting cooking) the answer is simple: family and wine. It couldn’t be a more perfect combination when you think about the essence of Portugal — and we’ll raise a glass of vinho verde to that.
Iberian in Spirit
Drawing a similarity between Milwaukee and Portugal may seem like a stretch. Yet not everyone cooks like Kyle, working with local farmers to get the freshest fare. It’s all cooked on a wood-fire grill, drizzled in olive oil and lemon in true Portuguese fashion. One thing he can’t easily access (and can’t wait to cook on this trip): fresh seafood.
Always Learning
For Kyle, travel gives him experiences that he can take back to his team as ideas and values to help better them as people and chefs. With ageless traditions in the kitchen, in fields and vineyards, this experience is Kyle's masterclass in cooking, living and celebrating the world.

Do I need Travel Insurance?
We highly recommend purchasing travel insurance. Travel insurance allows you to seek reimbursement for your trip costs; if your trip plans change for unforeseeable reasons, or if you need to get medical help, emergency transport, and for theft, loss or damage of items while traveling. For best coverage, always insure the full trip cost within two weeks of your initial trip deposit and note that most ‘Cancel For Any Reason’ policies must be purchased on the date of your initial deposit.
-
What is the cancellation policy?
You may cancel on or before May 5, 2023 and receive a full refund minus a $500 per-person service fee. If you cancel on or after May 6, 2023 there is a 50% cancellation fee. On or after July 4, 2023 there is a 100% cancellation fee. We highly recommend purchasing travel insurance as we are not able to make exceptions to this policy in cases of family/medical emergency or cases of the trip being canceled (see our Terms and Conditions for full details). Please note that for guests who are transferring trips or traveling on rescheduled trip dates, your cancelation terms will vary from the above, and are generally non-refundable. Please refer to your correspondence from our Customer Experience team for specific details.
